Zucchini pancakes

Instructions

  • 1.   Grate the zucchini with a coarse grater.
    Finely chop the onion.
    Chop the herbs.
  • 2.   Sauté the grated zucchini in a non-stick pan for a few minutes.
    Let it cool for a moment.
  • 3.   Mix all the ingredients in a bowl.
    Season with salt and pepper.
  • 4.   Heat the oil in a large pan.
  • 5.   Pour spoonfuls of the mixture.
    Flatten them like pancakes.
  • 6.   Let them cook for a few minutes before carefully flipping them over.
  • 7.   Let the other side brown well and serve them hot.

  • 2 eggs
  • 2 zucchinis
  • 1 tablespoon of flour
  • ½ onions
  • 1 garlic clove
  • 1 bunch of parsley
  • 7 sprig of chives
  • 2 teaspoon of oil
  • 40 g of ricotta
  • salt (according to taste)
  • pepper (according to taste)
