Zucchini Invisible WW

The savory version of the invisible. A light delight to enjoy as bite-sized appetizers or as a side dish with meat or fish. You can add nutmeg if you like.

Instructions

  • 1.   Preheat the oven to 180°C (350°F).
  • 2.   Slice the zucchini into thin slices using a mandoline.
  • 3.   Beat the eggs, add the flour, oil, baking powder, salt, and pepper.
    Gradually add the milk while stirring with a whisk.
  • 4.   Add the zucchini slices to the mixture.
    Gently mix to coat all the zucchini slices.
  • 5.   Pour into a baking dish or a non-stick 24cm (9-inch) diameter pan or into individual small molds.
  • 6.   Sprinkle with grated Parmesan cheese and bake for 45 minutes.
  • 7.   Let it cool slightly before unmolding.

  • 4 zucchinis
  • 100 ml of skim milk
  • 70 g of flour
  • 2 eggs
  • 1 tablespoon of olive oil
  • 35 g of grated parmesan
  • 1 teaspoon of baking powder
  • salt (according to taste)
  • pepper (according to taste)
