1. Preheat the oven to 200 °C (400 °F). Mix the flour and Herbes de Provence. Beat the eggs. Crush the breadcrumbs into a breading and mix with the Parmesan cheese.
Wash the zucchini and remove the ends, then cut them into sticks.
2. Roll the zucchini sticks in the flour and Herbes de Provence mixture, then in the beaten egg, and finally in the breadcrumb and Parmesan cheese mixture.
Place them on a baking sheet lined with parchment paper, season with salt and pepper, and bake for 10 to 15 minutes, keeping an eye on the cooking process.
