Swiss Chard Omelette

To be prepared in early summer, during the season of "young" Swiss chard, without the stems. It can be eaten hot, cold, as a main dish, as a side dish, in cubes for appetizers, or for picnics.

Instructions

  • 1.   Remove the stems and wash the Swiss chard thoroughly. Drain and roughly chop with a knife.
  • 2.   Heat 3 tablespoons over medium heat in a skillet.
  • 3.   Add the Swiss chard to the skillet and cover. Cook for 10-12 minutes over medium heat, stirring occasionally.
  • 4.   Beat 4 eggs, one minced garlic clove, salt, and pepper.
  • 5.   Add the beaten eggs to the Swiss chard, making sure to drain any water released by the Swiss chard from the skillet.
  • 6.   Cook for 5-6 minutes.

Notes & Suggestions

  • I usually fold mine like a pancake to form a thick rectangle, making it easier to cut into cubes.
