Coconut Milk Lentil Dhal (Red Lentils)

Instructions

  • 1.   Put the lentils to cook in a saucepan, in their volume of cold water (unsalted), until they are tender (10-15 min).
  • 2.   Meanwhile, finely slice the onion and brown it in ghee (clarified butter) or olive oil.
  • 3.   Halfway through cooking, add the diced tomato and finely chopped garlic, as well as the vegetables of your choice cut into small pieces. Then add the spices and lentils.
  • 4.   Mix everything together and then pour in the coconut milk, diluting it with a little water if necessary (it should not boil!).
  • 5.   Let it simmer for a few more minutes, adjusting the flavors, and then enjoy!

  • 2 teaspoon of curry powder
