Lemon Tuna Zucchini Linguine

A very flavorful and light recipe. Mixing pasta with vegetables adds more "volume" and lightens the plate. 7 WW Smart Points

Instructions

  • 1.   Peel the zucchini (every other strip).
    Cut them into small cubes.
  • 2.   Grate the lemon zest.
    Squeeze it.
  • 3.   Cook the linguine according to the indicated time.
  • 4.   Meanwhile, sauté the zucchini in a pan with olive oil for a few minutes.
    At the end of cooking, add minced garlic.
    Lightly salt (the tuna is salty).
  • 5.   When the linguine are cooked, drain them and pour them into the pan.
    Add the Skyr.
    Mix well and let it sit for 1 minute on the heat.
  • 6.   Off the heat, add the crumbled tuna and 1 or 2 tablespoons of lemon juice (for 2 servings) according to your taste.
  • 7.   Adjust the seasoning.
  • 8.   Plate in dishes.
    Add a few pinches of lemon zest and chopped parsley.
    Serve quickly.
  • 9.   Enjoy!

Notes & Suggestions

  • Skyr is a dairy specialty from Iceland that can be found in most supermarkets. It resembles a little bit of petit suisse. It is very rich in protein and practically 0% fat.
    If you don't have it, you can replace it with light cream or yogurt.

  • ½ untreated lemon

  • 3 tablespoon of skyr
  • 2 teaspoon of olive oil

  • parsley (according to taste)
