Cod fillet with tapenade

Instructions

  • 1.   In olive oil, sauté the finely chopped shallot and garlic.
    Add white wine and let it thicken (over medium heat).
    Add water and let it thicken again.
  • 2.   Strain and pour the liquid back into the pan.
    Add cream and let it thicken.
    Set aside for plating.
  • 3.   Prepare the cod fillets in portions (110g per person).
    Bake them for 12 minutes at 220°C.

  • 2 cod fillets
  • 1 garlic clove
  • 1 shallot
  • 5 cl of white wine
  • 10 cl of water
  • 1 tablespoon of thick sour cream
  • 1 tablespoon of olive oil
  • 30 g of olive tapenade
  • salt (according to taste)
  • pepper (according to taste)
