1. In a pan, sweat the chorizo and then, off the heat, blot the grease with paper towels.
2. In a bowl, crack the eggs. Add the sifted flour, baking powder, oil, and milk and mix everything together. Season with salt and pepper. Then add the grated gruyère cheese and chorizo and mix again.
3. Pour the mixture into a loaf pan and bake for about 45 minutes at 180°C (350°F).
