Mystery Chocolate Muffins

Craving chocolate but don't want to compromise your resolutions? Grated cooked beetroot gives a nice moist texture to these guilt-free muffins! An amazing recipe without any fat that you can lighten up by replacing all or part of the sugar with sweetener!

Instructions

  • 1.   Preheat the oven to 180 °C (350 °F).
  • 2.   Peel the cooked beetroot and grate it using a fine grater.
    Weigh out 80g (2.8 oz).
  • 3.   Grate the chocolate using a vegetable peeler into a bowl.
  • 4.   In a bowl, mix together the flour, cocoa powder, baking powder, and almond powder.
  • 5.   Separate the egg whites from the egg yolks.
  • 6.   Add the egg yolks to the flour mixture, along with the vanilla, and mix well.
  • 7.   Add the grated beetroot and half of the chocolate.
  • 8.   Beat the egg whites with the sugar or sweetener until stiff peaks form.
  • 9.   Gently fold the beaten egg whites into the mixture.
  • 10.   Pour the batter into 10 muffin molds or a cake pan.
  • 11.   Sprinkle with the remaining grated chocolate.
  • 12.   Bake for 25 to 30 minutes.
    Wait for the muffins to cool slightly before removing them from the molds.

  • 3 eggs
  • 1.5 tablespoon of cocoa
  • 1 cooked beetroot
  • 4 tablespoon of powdered sugar (optional)
  • 1 teaspoon of vanilla flavor
  • 3 teaspoon of almond powder
  • 1 bag of baking powder
  • 2 tablespoon of plain yogurt
  • 30 g of dark chocolate
