Zucchini and Feta Clafoutis WW

As an appetizer, diced for an aperitif, as a side dish for meat or fish, or even as a main course, this delicious and easy-to-make clafoutis will delight your taste buds! The recipe serves 4 as a side dish or main course. Served as an appetizer or starter, the recipe is adapted for 8 people. A flavorful recipe that is also light. You can lighten the recipe by replacing the cream with skyr or 0% fat cottage cheese.

Instructions

  • 1.   Preheat your oven to 180°C (350°F).
  • 2.   Crack the eggs into a large bowl.
  • 3.   Beat them, then add the flour and cream.
  • 4.   Mix everything together.
  • 5.   Wash the zucchini and grate them into a suitable container.
  • 6.   Pour 2 teaspoons of olive oil into a pan over medium heat.
  • 7.   Sauté the grated zucchini in the pan for 10 minutes.
  • 8.   Season with salt and pepper to taste (be careful not to add too much salt as feta is already salty).
  • 9.   Remove the zucchini from the pan and add them to the mixture.
  • 10.   Add the feta in small pieces.
  • 11.   Mix well and pour into a non-stick mold.
  • 12.   Bake for 25 minutes.

Notes & Suggestions

  • You can replace the feta with another cheese, such as fresh goat cheese or Parmesan.
