Ardèche Bombine (20,79)

Instructions

  • 1.   Rinse and dry the potatoes before peeling them. Then cut them into thick slices. Do the same with the carrots. Peel and finely chop the onion.
  • 2.   Cut the pork into small pieces. Heat the olive oil in a casserole dish. Add the pieces of meat and brown them for a few minutes. Then add the potatoes, carrots, and chopped onion. Sauté everything for 5 minutes.
  • 3.   Then add the black olives, bay leaves, thyme sprig, salt, and pepper. Cover after pouring 3 large glasses of hot water and simmer over low heat for 1 hour. Stir occasionally without crushing the potatoes. Add water if necessary.
  • 4.   Make sure to check the cooking of the potatoes by inserting a knife inside. If it goes through easily, your dish is ready. You can now serve it with a fresh salad. Enjoy your meal!
