1. Preheat the oven to 180°C (350°F).
2. In the robot with the kneading/chopping blade, add 25 cl (1 cup) of water, the butter, and salt, then operate at speed 3 at 90°C (194°F) for 8 minutes.
3. Add the flour and mix at speed 6 for 2 minutes.
4. Transfer the mixture to a bowl and rinse the bowl with cold water to cool it down.
Put the mixture back into the robot with the kneading/chopping blade and operate at speed 7.
Add the eggs one by one and let it run for 2 minutes.
5. Add 120 g (1 cup) of grated comté cheese and nutmeg, then let it run for an additional 1 minute.
6. Place a baking sheet on the oven tray. Using a spoon, place small mounds of dough on the sheet.
Sprinkle with the remaining comté cheese. Bake for 18 to 20 minutes.
Serve warm or cold.
