Leek and Potato Velouté

Instructions

  • 1.   Peel and finely slice the leeks and onions.
  • 2.   In a saucepan, melt the butter and add the leeks and onions. Stir and let them sweat for 10 minutes.
  • 3.   Peel the potatoes and cut them into slices, then add them to the saucepan.
  • 4.   Season with salt and pepper, add the milk, water, and broth. Mix well and cook over low heat for 30 minutes.
  • 5.   Add the cream, blend everything together, and serve hot, garnished with chopped chives.

  • ½ chicken bouillon cubes
