1. In a bowl, mash the avocado flesh.
Add lemon juice, chopped chives, paprika (mild or spicy, according to your taste).
Season with salt and pepper.
2. Lightly toast the bread slices.
3. Bring a pot of water to a boil, adding a tablespoon of vinegar.
Reduce the heat and carefully crack the eggs, one by one, into a small bowl.
Gently pour the eggs into the simmering water and let them cook for 3 to 4 minutes, depending on desired doneness.
4. Carefully transfer the poached eggs onto a paper towel.
5. Spread the avocado mixture onto the bread slices.
6. Arrange the tartines on plates.
Place the poached egg on top, being careful not to break it.
Season with salt and pepper to taste.
Sprinkle with chopped chives and a pinch of paprika.
