Avocado and Poached Egg Tartine

A small and quick appetizer to prepare. When served with a good salad, it can even be a main course.

Instructions

  • 1.   In a bowl, mash the avocado flesh.
    Add lemon juice, chopped chives, paprika (mild or spicy, according to your taste).
    Season with salt and pepper.
  • 2.   Lightly toast the bread slices.
  • 3.   Bring a pot of water to a boil, adding a tablespoon of vinegar.
    Reduce the heat and carefully crack the eggs, one by one, into a small bowl.
    Gently pour the eggs into the simmering water and let them cook for 3 to 4 minutes, depending on desired doneness.
  • 4.   Carefully transfer the poached eggs onto a paper towel.
  • 5.   Spread the avocado mixture onto the bread slices.
  • 6.   Arrange the tartines on plates.
    Place the poached egg on top, being careful not to break it.
    Season with salt and pepper to taste.
    Sprinkle with chopped chives and a pinch of paprika.

  • 7 sprig of chives
  • 3 teaspoon of lemon juice
  • 2 pinch of paprika
