Instructions

  • 1.   Preheat the oven to 200 °C (400 °F). Line a baking sheet with parchment paper.
  • 2.   Spread the sweet potato and onion pieces on the baking sheet and toss them with olive oil. Roast the vegetables in the oven for 45 to 55 minutes, until cooked. Remove them from the oven and let them cool for a few moments. Transfer them to a salad bowl.
  • 3.   Mix chili powder, salt, pepper, and white wine vinegar in a small bowl. Incorporate this mixture into the roasted vegetables and serve.
