. Slice the chicken breasts and mushrooms. Sauté the chicken pieces in butter or oil and set aside.

. Sauté the sliced mushrooms until they release all their water.

. Meanwhile, peel the cucumber, cut it in half lengthwise, and remove the seeds. Cut it into 5cm pieces.

. Add the chicken, chicken broth, cucumber, soy sauce, lemon juice to the mushrooms and let simmer for about 30 minutes.

. Cook the rice.

. If the sauce is too liquid, thicken it with cornstarch.
