Chicken with Cucumber

Instructions

  • 1.   Slice the chicken breasts and mushrooms. Sauté the chicken pieces in butter or oil and set aside.
  • 2.   Sauté the sliced mushrooms until they release all their water.
  • 3.   Meanwhile, peel the cucumber, cut it in half lengthwise, and remove the seeds. Cut it into 5cm pieces.
  • 4.   Add the chicken, chicken broth, cucumber, soy sauce, lemon juice to the mushrooms and let simmer for about 30 minutes.
  • 5.   Cook the rice.
  • 6.   If the sauce is too liquid, thicken it with cornstarch.

  • 3 chicken breast
  • 250 g of button mushroom
  • 1 cucumber
  • 1 liter of chicken broth
  • 3 tablespoon of soy sauce
  • ½ lemon juice
  • 1 tablespoon of olive oil
  • 150 g of basmati rice
  • salt (according to taste)
  • pepper (according to taste)
