Light Winter Vegetable and Macaroni Soup

This simple recipe for light winter vegetable and macaroni soup has all the ingredients to comfort you on cool evenings. A medley of vegetables combined with pasta makes for a delicious soup! It's quick and made with ingredients that most of us already have at home.

Instructions

  • 1.   Bring 2 liters of water to a boil in a large pot. Add 1 tablespoon of oil and 2 tablespoons of coarse salt. Add the macaroni and let it cook for 12 minutes.
  • 2.   In another pot, heat 1 liter of water. Once it starts boiling, add the chicken broth. Once it is diluted, add the frozen vegetables, reduce the heat, and let it cook for 10 minutes.
  • 3.   Rinse the tomatoes under hot water and peel them. Squeeze them to remove the seeds. Cut them into small pieces, add them to the broth, and let it cook for another 5 minutes.
  • 4.   Drain the macaroni and add them to the soup. Mix well and serve!

  • 150 g of macaroni
  • 2 tomatoes
  • 2 chicken bouillon cubes
  • 1 tablespoon of oil
  • salt (according to taste)
  • pepper (according to taste)
