1. Preheat your oven to 180°C (350°F). Peel the pears, remove the core, and cut them into thick slices. Cut the goat cheese into slices and roughly chop the walnuts. Slice the onion.
2. Line a tart dish with the shortcrust pastry. On the pastry base, arrange the pear slices, goat cheese slices, and onion slices.
3. Whisk the eggs with the heavy cream, season, and pour over the tart. Sprinkle with chopped walnuts and drizzle with a little honey.
