2. Remove the sardines from the can and keep their oil.
3. When the potatoes are cooked, peel them and roughly mash them with a fork in a sauté pan, incorporating the sauce and oil from the sardines. Add a little olive oil to the mash if it is too dry. Season with salt and pepper and let the mash cook a little longer until it is slightly browned underneath.
4. When serving, flatten the mash and arrange the sardines on top. Sprinkle with chives.
