Nutty Carrot Cake Bowlcake

A moist and flavorful treat with spices, crunchy nuts, and a delicious vanilla topping. Perfect for breakfast or a snack. Can also be enjoyed as a dessert for 2 people! You can use brown sugar instead of sweetener if desired.

Instructions

  • 1.   Peel and grate the carrot.
    Break the walnut kernels into pieces (keep one whole for decoration).
  • 2.   In a bowl, mix the egg with two tablespoons of sweetener.
    Add the semolina, baking powder, and mixed spices.
    Mix well.
  • 3.   Add the grated carrot, applesauce, and milk, then add the walnut pieces.
  • 4.   Cook in the microwave for three minutes.
    Check the cooking and extend by 30 seconds if needed.
    The bowlcake should remain moist and not dry.
  • 5.   While cooking, mix the skyr with a few drops of vanilla extract and a little sugar or sweetener.
  • 6.   Carefully unmold onto a plate and let cool for a few moments.
  • 7.   Drizzle with the skyr and decorate with the walnut kernel.
    Sprinkle with mixed spices if desired.

  • 1 carrot
  • 1 tablespoon of unsweetened applesauce
  • 35 ml of skim milk
  • 3 teaspoon of sweetener
  • 50 g of skyr
  • ½ teaspoon of baking powder
  • 12 g of pecan nut
  • 3 pinch of four spices
  • 1 vanilla flavor
