Gyoza: Pork dumplings

Simple Japanese dish. Makes 120 gyoza.

Instructions

  • 1.   Finely chop the cabbage and leek.
  • 2.   Grate the ginger and garlic.
  • 3.   Put all the ingredients for the filling in a bowl and knead them for 5 minutes to obtain a homogeneous mixture.
  • 4.   Place a good teaspoon of filling in the middle of a dough disk.
  • 5.   Moisten the edge of the disk on one half with your finger.
  • 6.   Fold it in half to form a dumpling. Pleat the edge to seal the dumpling well.

  • 600 g of ground pork
  • 600 g of leek
  • 18 leaf of white cabbage
  • 6 slice of fresh ginger
  • 6 garlic cloves
  • 6 tablespoon of oyster sauce
  • 6 tablespoon of sake
  • 6 tablespoon of soy sauce
  • 6 tablespoon of sesame oil
  • 3 teaspoon of salt
  • 1 small pepper
  • 2 bag of gyozo no kawa (pre-tinned paste in the form of small discs)
