Instructions

. Sear the meat with olive oil in a Dutch oven. Peel and slice the onion. Wash, peel, and cut the vegetables into small sticks.

. Add the vegetables to the meat and cook for 10 minutes, then add the liquids and herbs. Season.

. Cover and cook for 45 minutes over low heat.

. You can add water during cooking if needed.
