Instructions
1. Prepare the sauce:
sugar + sake + miso
Mix the miso well
2. Remove a portion of the eggplant skin
Cut them in half along with the ends so that they can rest on the ends.
Hollow them out, but not too much as they become fragile quickly
3. Fry the eggplants, making sure to fry them evenly as they float!
4. Cut the ginger into very small pieces and sauté it in sake
Quickly sauté the meat
Add the sauce
5. Once the meat is cooked and the liquid has evaporated, the filling is ready to be placed in the eggplant
6. "Sprinkle" everything with thinly sliced green onion
