Instructions

  • 1.   In the bowl of a food processor, mix the semolina, flour, and sugar with the paddle attachment. Add the baking soda, then pour in the oil and orange blossom water. Knead the dough, then gradually add water until the dough is smooth. Chill it in plastic wrap.
  • 2.   In a pan, toast the pine nuts, almonds, and sesame seeds for 1 minute. Blend everything with the dates and cinnamon (add a little oil if the mixture is too dry).
  • 3.   Roll out the dough to a thickness of ½ cm, then cut it into a large rectangle. Shape the date paste into a 2 cm diameter log and place it in the center of the rectangle.
  • 4.   Roll them up, flatten the log, and cut the makrouts diagonally. Fry them for 2 to 3 minutes in hot oil and place them on paper towels.
  • 5.   Bring the water, sugar, and orange blossom water to a boil and let it simmer until it reaches the consistency of a syrup. Drizzle the makrouts with this syrup and enjoy!

  • 200 g of fine wheat semolina
  • 200 g of medium wheat semolina
  • 120 g of flour
  • 10 cl of oil
  • 30 g of sugar
  • 5 tablespoon of orange blossom
  • 1 pinch of baking soda
  • 400 g of date
  • 25 g of pine nut
  • 25 g of sesame seed
  • 25 g of crushed almond
  • ½ teaspoon of cinnamon
