1. Cut the bell pepper into small dice (removing the skin with a peeler if possible, it's more digestible).
Add the minced onion and let it brown.
2. Sauté them in a tablespoon of oil in a pan over low heat for about 10 minutes.
3. Add the ground beef, drained corn (or red beans), crushed garlic clove, herbs, spices, salt and pepper, and a few drops of Tabasco according to your taste.
4. Let it cook for 5-10 minutes (not too long, otherwise it will be very dry), then add 2 tablespoons of sauce (passata, crushed tomatoes, Mexican, etc.).
5. Option 1: Warm the tortillas in the microwave or in a pan for 1 minute, then place the beef mixture on top. Add some cheese, roll it up, and enjoy.
6. Option 2: Fill the center of each tortilla with the simmered beef. Fold the fajitas. Place them in the bottom of a baking dish. Sprinkle them with grated cheddar cheese. Slide the dish under the hot broiler of the oven for a few minutes to melt the cheese. Serve hot.
