Apple Fritters

A specialty straight from Alsace, a delightful childhood treat. It's a cross between a fritter and an apple pancake, but to decide, you just have to try them. The crispiness of the fritter, the softness of the apple... it's truly a delight! I don't make them very often, but every time I do, I think to myself, "Wow, these are so good!"

Instructions

  • 1.   In a bowl, mix the eggs and 20g of sugar. Add the flour, then gradually add the milk. (your usual pancake batter, slightly thicker)
If there are lumps, don't worry: just use a blender and problem solved!
  • 2.   Peel the apples and cut them into slices about 1/2 cm thick.
  • 3.   Heat a non-stick pan and add a small amount of oil. (the amount of oil depends on the size of the pan)
Or for a lighter version, lightly grease the pan, like for pancakes.
  • 4.   While the oil is heating, mix the remaining 100g of sugar and cinnamon and put the mixture in a flat dish. Set aside.
Prepare a plate lined with paper towels and another plate where you will place your ready-to-eat apple fritters.
  • 5.   When the pan is hot, dip your apple slices in the batter and cook them on both sides for a few minutes.
  • 6.   Once cooked, roll them in the sugar/cinnamon mixture and place them on the serving dish. (in our house, the adults did the cooking, and the kids did the coating!)
For the lighter version, place them on a baking sheet, sprinkle them very lightly, and bake at 180°C for a few minutes.

Now all that's left is to enjoy them! They're even better when they're warm...
