Wild Garlic Puff Pastry Spirals

Instructions

  • 1.   Preheat the oven to 180°C (350°F). Wash your wild garlic leaves.
    Spread the ricotta cheese on the puff pastry. Arrange the wild garlic leaves on top. Sprinkle with some grated cheese (such as gruyère, emmental, comté...) then roll up the filled pastry tightly, lengthwise, to create pretty spirals.
  • 2.   If you have time, place the roll in the freezer to firm up (it makes cutting easier). Cut into approximately 1 cm (0.4 inch) wide slices and place them on a baking sheet lined with parchment paper.
  • 3.   Beat the egg, brush the spirals with it, and bake for 15 to 20 minutes.

Notes & Suggestions

  • I kept the wild garlic leaves whole in this recipe, but you can also chop them or use wild garlic pesto instead.
