Creamy Lentils with Root Vegetables

Instructions

  • 1.   Peel and cut the onion, carrots, turnips, and parsnips into half-inch pieces.
    Put them in a saucepan and add the bacon.
  • 2.   (Deglaze with a little white wine if desired) add a splash of water (or broth).
    Let cook for about 25 minutes.
  • 3.   Add the can of lentils with its juice, crushed garlic, mustard, curry, and mix, lightly mashing the vegetables to create a creamy texture.
  • 4.   If desired, add the spinach, gently mix, and serve immediately!
