1. In a mixing bowl, combine the dry ingredients and mix.
2. Then add the liquid ingredients and mix again. You should be able to form a ball.
3. Using a rolling pin, roll out the dough to about 3mm thick.
4. Cut out your biscuits using a cookie cutter. (I used a Tupperware container with a shape that worked well for me.)
5. Place on a baking sheet lined with parchment paper.
Bake for 10-12 minutes at 180°C (350°F).
Allow to cool completely!
Notes & Suggestions
What's great about this recipe is that you can change almost all of the ingredients! Yes, really!
For example, you can swap the whole wheat flour for spelt, oat, or rye flour...
You can swap the crushed hazelnuts for almond slivers or toasted buckwheat groats (kasha).
Replace the 2 tablespoons of plant-based or animal milk with 2 tablespoons of unsweetened applesauce...
Replace the chocolate chips with dried fruits.
Replace the honey with agave syrup, maple syrup, or coconut syrup...
However, I recommend keeping the oats and following the quantities! Yes, still...
=> For those with a sweet tooth, you may want to add a little more honey...
Tip of the day: Use plastic wrap to flatten your dough and say goodbye to sticky dough on the rolling pin.
