Plain Quenelles

Instructions

  • 1.   Heat a glass of water with butter and a little salt.
  • 2.   When the butter is melted, add the flour and cook for 10 minutes over low heat, stirring constantly.
  • 3.   Off the heat, add the gruyère cheese, then the eggs and nutmeg when the mixture has cooled slightly.
  • 4.   Shape the mixture into sausages on a floured surface and refrigerate for a good half hour to help the quenelles hold their shape.
  • 5.   Place the quenelles in a pot and cook for 30 to 40 minutes over very low heat, with a sauce of your choice (the sauce should almost cover the quenelles).

  • 3 eggs
  • 1 pinch of nutmeg
  • 20 cl of water
  • salt (according to taste)
