Lentil Curry

A delicious and fragrant vegan dish rich in protein.

Instructions

  • 1.   Blanch the tomatoes.
    Peel them.
    Remove the seeds and cut them into pieces.
  • 2.   Peel and cut the onion and carrots into small pieces.
  • 3.   Toast the spices in a large pot for a few moments.
  • 4.   Add the oil, then the carrots and onion, and sauté for a few minutes.
  • 5.   Add the tomato pieces and lentils.
  • 6.   Pour in the coconut milk and water.
    Add salt.
  • 7.   Let it cook for 15 minutes, stirring occasionally.
    Add a little water if needed.
  • 8.   Sprinkle with fresh coriander. Enjoy!

  • 300 g of red lentil
  • 1 onion
  • 2 carrots
  • 3 tomatoes
  • 1 teaspoon of curry powder
  • ½ teaspoon of turmeric powder
  • 200 ml of light coconut milk
  • 1 glass of water
  • 2 teaspoon of oil
  • 1 bunch of fresh coriander (optional)
  • salt (according to taste)
