1. Peel and wash the spring onion.
Cut it into beveled sections.
2. Peel the ginger.
Cut it into thin slices and then into julienne.
3. Separate the coriander leaves.
4. If using: Finely slice the chicken or salmon fillet, similar to carpaccio.
5. Bring the broth to a boil, add the soy sauce and sesame oil, and the mushrooms.
6. Add the spring onion, ginger, coriander, and mix.
7. Bring to a boil again and add the noodles for 4 minutes.
8. Turn off the heat, add the slices of meat. Serve immediately.
