Pumpkin and red lentil soup

Instructions

  • 1.   Cut the pumpkin into large pieces and remove the skin.
  • 2.   Set the Cookeo to the sauté mode and sauté the onion in oil. Once it has softened, add the lentils, butternut squash, curry, coconut milk or cream, and finally the water. Stop sautéing and switch to the quick cooking mode.
  • 3.   Close the lid and cook for 10 minutes.
  • 4.   Blend at the end of cooking and enjoy.

  • 500 g of pumpkin
  • 150 g of red lentil
  • 1 onion
  • 500 ml of water
  • 20 ml of coconut milk
  • 1 pinch of curry powder
  • salt (according to taste)

    Delicious, creamy. Season well with salt and pepper, as butternut can be a bit bland otherwise. So, I used butternut (leftover) 800 ml water, 200 ml coconut cream, and 1 whole yellow onion. Thank you.
