Cod with Tomato and White Wine

. Preheat the oven to 200°C (400°F). Place the cod in an ovenproof dish. Drizzle with olive oil and spread it evenly in the dish.

. Add the minced garlic and shallot, and cover everything with tomato pulp and lemon slices.

. Pour white wine over the fish, season with salt and pepper, and bake for 30 minutes with a pinch of Herbes de Provence.
