Cod with Tomato and White Wine

This is an easy recipe that practically cooks itself in the oven!

Instructions

  • 1.   Preheat the oven to 200°C (400°F). Place the cod in an ovenproof dish. Drizzle with olive oil and spread it evenly in the dish.
  • 2.   Add the minced garlic and shallot, and cover everything with tomato pulp and lemon slices.
  • 3.   Pour white wine over the fish, season with salt and pepper, and bake for 30 minutes with a pinch of Herbes de Provence.

  • 600 g of cod fillet
  • 2 shallots
  • 15 cl of dry white wine
  • 3 tablespoon of olive oil
  • 2 garlic cloves
  • 400 g of canned peeled tomato
  • 1 lemon
  • 1 pinch of Provence herb
  • salt (according to taste)
  • pepper (according to taste)

    Very good. I steamed some potatoes and added them to the dish 5 minutes before the end of cooking.
