Quick Moussaka without potatoes (low-carb)

. Slice the eggplants into thin slices and bake them in the oven with half of the olive oil for 20 minutes at 220°C (425°F).

. Sauté the onion in the remaining olive oil, then add the steaks that you will cut into pieces in the pan.

. When the meat has browned, add the tomato pulp with finely chopped basil.

. Stir well, then pour in the broth and grated cheese, stirring constantly for 5 minutes.

. Season with salt and pepper (according to taste, taking into account the broth for saltiness).

. In a gratin dish, line the bottom with the eggplants, then add alternating layers of the meat mixture and eggplants.

. Finally, crumble the feta on top and broil in the oven for about 5 minutes.
