Salmon and Spinach Bowlcake

A delicious bowlcake for a light and balanced meal on the go

Instructions

  • 1.   Cook the spinach in the microwave for a few minutes.
    Let it cool down.
  • 2.   Cut the smoked salmon slice into small pieces.
    Keep one or two slightly larger pieces for decoration.
  • 3.   If using fresh chives, chop them finely.
  • 4.   In a bowl, mix the egg with the oat flakes and baking powder.
  • 5.   Add 2/3 of the skyr. Mix well.
    If the mixture is too dense, add a little milk.
  • 6.   Add a spoonful of chives, the salmon pieces, and the spinach.
    Season lightly as the smoked salmon is already quite salty.
  • 7.   Cook for 3.5 to 4 minutes in the microwave.
  • 8.   Meanwhile, mix the remaining skyr with the chives, lemon juice, salt, and pepper.
  • 9.   Unmold the bowlcake onto a plate, making sure to loosen the edges of the bowl.
  • 10.   Let it cool down for a few moments.
  • 11.   Serve topped with the skyr sauce and some pieces of salmon.

Notes & Suggestions

  • You can use cottage cheese instead of skyr.

  • 120 g of frozen spinach
  • 32 g of oat flake
  • 100 g of skyr
  • 2 tablespoon of skim milk
  • ½ teaspoon of baking powder
  • ½ teaspoon of lemon juice
  • 2 teaspoon of chives
  • salt (according to taste)
  • pepper (according to taste)
