Instructions

  • 1.   Peel and mince the onion. Wash the zucchini and cut it in half lengthwise, then cut it into small pieces. Put the oil in a pan and heat it gently. Add the onions and wait until they become translucent, still on low heat. Add the zucchini and slightly increase the temperature. Cook until the zucchini is tender. Add the curry and coconut milk, do not stir and let it cook for another 5 minutes. Serve with a side of basmati rice. More recipes here.
