1. Cook the squash:
- Either in the microwave with a little water for 2 minutes at 600W
- Or on the stovetop
It should be tender.
2. Fry in oil:
- Onions
- Garlic
- Ginger
Until the onions are cooked.
3. Add the meat until it is almost cooked.
4. Add:
- Curry
- Soy sauce
Cook until dry.
5. Add the squash; if it was cooked on the stovetop (or not), make sure there is as little water as possible (and therefore cook the meat less if necessary).
Add ketchup.
6. Continue cooking until only a fairly dry and compact paste remains.
7. - Spread butter on one side of each slice.
- Stick them together face to face to facilitate assembly.
- Spread the filling generously.
- Place the slice of cheese.
8. If you have a croque monsieur machine, that's perfect, so the buttered sides should be on the outside.
Otherwise, take the first slice of bread (with the filling on top) and place it in a pan (butter side down), then cover with the other piece of bread with the butter side up.
9. Grill one side of the sandwich slowly and then flip it over to brown both sides of the bread.
Notes & Suggestions
The "authentic" recipe does not include:
- Butternut squash, but rather Japanese squash (kabocha squash).
- "Indian" curry, but rather Japanese curry.
