Cantonese Fried Rice (Japanese version - Yakimeshi)

Instructions
1. Crumble the rice to break up large pieces.
2. Heat oil and add the eggs (as an omelette).
They should be half-cooked, more "undercooked" than cooked.
3. Scramble everything with a spatula.
4. Add:
- diced ham
- salt
- pepper
- peas (optional)
5. Increase the heat and pour soy sauce along the edges of the pan.
It will caramelize, it should not be absorbed too much by the rice. This is the difference between a successful or failed recipe.
6. Scramble everything well.
7. Shape the rice into a dome (using a bowl flipped onto the plate).
