Fresh Ramen (Hiyashi Chuka)

Instructions

  • 1.   For the sauce; mix;
    - water
    - soy sauce
    - tahini
    - rice vinegar
    - sesame oil
    - sugar
    - finely grated ginger
    - salt
    - pepper

    Mix well, there should be a slight emulsion.
  • 2.   Slice:
    - ham
    - cucumber
    - usuyaki tamago (see note at the end)
  • 3.   Cook the noodles and rinse them thoroughly, drizzle with oil to prevent sticking.

    Putting them in ice water is even better!
  • 4.   Serve by placing the noodles, separately on top: cucumber, ham, and eggs.
    Add a few cherry tomatoes cut in half.

  • 2 tablespoon of water
  • 2 tablespoon of soy sauce
  • 2 tablespoon of tahini (sesame paste)
  • 2 tablespoon of rice vinegar
  • 2 teaspoon of sesame oil
  • 2 teaspoon of sugar
  • 1 teaspoon of fresh ginger
  • 1 bag of dashi (optional)
  • Salade :
  • 240 g of noodle
  • 1 small cucumber
  • 4 small cherry tomato
  • 4 slice of slice of ham
  • 2 usuyaki tamago
  • 1 teaspoon of sesame seed
  • salt (according to taste)
  • pepper (according to taste)
