Coriander and Lime Chicken

Instructions

  • 1.   1. Preheat the oven to 200 °C (400 °F).
  • 2.   2. Mix all the marinade ingredients well in a large dish.
  • 3.   3. Add the chicken to the marinade.
  • 4.   4. Stir well so that the chicken absorbs the marinade.
  • 5.   5. Let marinate for at least 15 minutes, but it's even better for 2 hours.
  • 6.   6. Heat a pan with a little oil.
  • 7.   7. Sear the chicken pieces, skin side down, until lightly golden.
  • 8.   8. Flip them over and continue cooking until all the pieces are golden.
  • 9.   9. Now place the pan in the oven and let cook for 20 minutes.
  • 10.   10. Remove the pan from the oven.
  • 11.   11. Transfer the chicken and remaining marinade to a serving dish (without keeping the cooking oil).
  • 12.   12. Squeeze lime over the chicken and add coriander leaves.

  • And there you have it, your coriander and lime marinated chicken is ready :-) I told you this recipe was easy and quick! Make sure your pan is oven-safe, like these ones! Otherwise, use a baking dish to cook the chicken in the oven. Know that you can also grill the chicken if you like that type of cooking. You can choose boneless chicken like here, but this recipe is equally delicious with chicken breasts, thighs, or wings.
