Lemon Dessert Cream with Thermomix

This lemon cream is a very quick and easy dessert to make with your Thermomix. Served with financiers or speculoos, it is a great way to finish your meal with a light and creamy touch. Variation: This recipe can be made with either yellow lemons or limes. In any case, if you use the zest, make sure to use organic lemons. Tip: For those with a sweet tooth, you can sprinkle brown sugar on top of the creams and use a blowtorch to create a crème brûlée-like crust. Instructions

  • 1.   Place 1 organic lemon zest (optional) in the Thermomix and pulverize for 8 sec/speed 10. Then scrape the sides of the bowl with a spatula.
  • 2.   Add 2 eggs, 30 grams of granulated sugar, and 1 packet of vanilla sugar to the Thermomix.
    Mix for 1 min/speed 4.
  • 3.   Add 15 grams of cornstarch, 2 lemon juices, and 480 grams of semi-skimmed milk to the Thermomix.
    Cook for 10 min/90°C/speed 3.
  • 4.   Add 20 grams of heavy cream to the Thermomix.
    Mix for 10 sec/speed 4.
  • 5.   Transfer the contents of the Thermomix to ramekins and refrigerate for 02 h 00 min.
