Salmon with mustard sauce and mashed potatoes

Instructions

  • 1.   For the mustard sauce: Melt the butter in a saucepan with the mustard. Mix everything together with a whisk until smooth. Add the cream, then mix again. Finish with the lemon juice and keep the sauce warm.
  • 2.   For the mashed potatoes: Cook the whole potatoes in a steamer or in a pot of water (start cooking with cold water). Drain the potatoes and peel them gently. Mash them with a potato masher or a fork. Add the butter, Espelette pepper, chives, salt, pepper, and gruyere. Keep warm.
  • 3.   For cooking the fish: In a pan, heat a drizzle of sunflower oil. Once the oil is hot, carefully place the salmon skin-side down. Cook over medium heat so that the heat spreads evenly throughout the salmon fillets.
  • 4.   Once the fish is cooked through, you can start plating. Place a spoonful of mashed potatoes in the center. Add the salmon fillet on top and drizzle with mustard sauce. Serve immediately.

  • 4 salmon fillets
  • 2 tablespoon of sunflower oil
  • Pour l'écrasé de pomme de terre :
  • 1 kg of potato
  • 10 sprig of chives
  • 1 pinch of Espelette pepper
  • 1 teaspoon of butter
  • Pour la sauce à la moutarde :
  • 25 g of rapeseed oil
  • ½ tablespoon of whole grain mustard
  • ½ lemons
  • 10 cl of hemp cream
  • salt (according to taste)
  • pepper (according to taste)
  • parsley (according to taste)
