Frozen chocolate and caramelized almond nougat
Instructions
- 1. Break the chocolate into pieces and melt it with 6 tablespoons of water in a double boiler or in the microwave.
- 2. Caramelize the almonds with the sugar in a non-stick pan, stirring to prevent them from clumping together. Let them cool.
- 3. Whip the chilled cream until it forms stiff peaks. Add the milk and tablespoon of sugar.
- 4. Beat the egg whites until stiff peaks form with a pinch of salt, then gradually pour in the hot liquid honey while continuing to beat.
- 5. Vigorously mix the egg yolks with the melted chocolate. Add the almonds, then gently fold in the whipped cream and beaten egg whites.
- 6. Line the bottom and sides of a round or loaf cake pan with parchment paper. Pour in the mixture and freeze for at least 12 hours.
- 7. Remove the frozen nougat from the freezer, unmold it, and let it sit for 15 minutes before serving.
