Gluten-free Cannelés

Instructions

  • 1.   Preheat your oven to 220°C (425°F).
  • 2.   Bring the milk to a boil. Let it cool for one minute.
  • 3.   Whisk the eggs in a bowl with the granulated sugar. Pour it over the hot milk.
  • 4.   Mix vigorously to avoid cooking the eggs. Add the rum and let it cool.
  • 5.   Mix the cornstarch, rice flour, almond powder, and vanilla sugar.
  • 6.   Gradually add the cooled liquid.
  • 7.   Fill the greased cannelé molds about 3/4 full.
  • 8.   Bake at 220°C (425°F) for 10 minutes, then reduce the oven temperature to 180°C (350°F) and continue baking for about 1 hour.
