Stuffed Capon with Chestnuts

Instructions

  • 1.   Put the chestnuts in a saucepan with 50g of butter, let it heat.
  • 2.   Put the sausage meat in a bowl and mix with the eggs. Add the chestnuts, salt, and pepper.
  • 3.   Stuff the capon with this filling and truss it.
  • 4.   Put it in the oven and let it cook for 3 hours at 200°C (th 6-7).
  • 5.   Arrange the stuffing in the middle of the dish, surrounded by pieces of capon.
    Put the cooking juices in a gravy boat and serve separately.

  • 300 g of sausage meat
  • 1 kg of chestnut
  • 2 eggs
  • salt (according to taste)
