Chickpea and Tomato Couscous

Instructions

  • 1.   Bring a large pot of water to a boil.
  • 2.   Meanwhile, finely chop the 1/2 onion and fill a bowl with water and a few ice cubes.
  • 3.   Once the water is boiling, add the tomatoes. Let them cook for 1 to 2 minutes maximum, then immediately plunge them into the bowl of ice water. Remove them from the water, peel them, and cut them into small pieces.
  • 4.   Cook the couscous.
  • 5.   Heat the chickpeas.
  • 6.   In a greased pan, sauté the onions until golden, then add the tomatoes and stir frequently. Season with salt and pepper. After one or two minutes of cooking, add a little water to make it look like a sauce.
  • 7.   Serve as desired!

  • 2 tomatoes
  • ½ onions
  • 150 g of chickpeas (canned, drained weight)
  • 1 tablespoon of fine herbs
  • 1 teaspoon of paprika
  • 1 teaspoon of tomato paste
  • salt (according to taste)
  • pepper (according to taste)
