Agar agar marshmallows

Marshmallows were originally made from extract of Marshmallow root, known for its cough suppressant properties. A favorite treat for children, they also bring back childhood memories for adults, whether roasted on a barbecue or skewered on sticks. This recipe offers a preparation of agar agar marshmallows, without any animal gelatin, making it ideal for a vegan diet.

Instructions

  • 1.   In a container, pour 100 ml of cold water, then add the agar agar. Mix with a whisk to dissolve it in the water.
  • 2.   In a saucepan, bring the agar agar to a boil. Let the mixture turn into a syrup and let it cook for 7 minutes (or 121°C with a kitchen thermometer).
  • 3.   Add the orange blossom.
  • 4.   Using an electric mixer or a whisk, beat the egg whites until stiff peaks form. Slowly pour the syrup into the egg whites, until the mixture cools down. Pour the preparation into a special marshmallow frame or a silicone dish, and cover it with parchment paper.
  • 5.   Let it rest for at least 1 day on your countertop.
  • 6.   The next day, cut squares from your mixture and roll them in powdered sugar.
  • 7.   Once done, let them dry again on your countertop for 2 days.
