Instructions

  • 1.   Slice the leeks and onions.

    Sauté them in a drizzle of oil in a Dutch oven. 5 min.

    Dice the carrots and turnips, add them to the Dutch oven. Sauté for 5 min.

    Cover with water, bring to a gentle boil. 15 min.

    Add the potatoes, when the vegetables are tender, remove some of the water from the Dutch oven. Blend and add the reserved water to achieve the desired soup consistency.
    Season to taste.
