1. Peel the onion, peel the carrots and zucchini. Then wash them.
2. Using a grater with large holes, grate your carrots. Set aside on a plate.
3. On your cutting board, dice the zucchini and onion.
4. Pour a drizzle of olive oil into a wok, then sauté the onions. Let them brown until they are translucent.
5. Then add the zucchini and carrots.
6. Cook for about 20 minutes, until they are tender.
7. (They should no longer be crunchy).
8. At this point, add the ground beef.
9. Sprinkle with herbes de Provence and parsley, then continue cooking your mixture. Your ground beef should be well cooked.
10. Season with salt and pepper.
